Seafood Rice Casserole
ingredients
- 1. 3 cups of cooked long grain rice,
- 2. 1/2 cup of chopped green pepper,
- 3. 1/2 cup of chopped onion,
- 4. 1/2 pound sliced mushrooms,
- 5. 1 cup chopped celery,
- 6. 8 oz can sliced water chestnuts,
- 7. 1 cup mayonnaise,
- 8. 12 oz of shrimp,
- 9. 7 oz of crab meat,
- 10. 12 oz can of tomato juice,
- 11. 1/4 teaspoon salt,
- 12. 1/8 teaspoon pepper,
- 13. 1/2 cup slice almonds (optional),
- 14. 1/2 cup grated swiss cheese.

1. Saute green pepper, onions, mushrooms and celery.

2. Combine with the next seven ingredients.

3. Pour into a 2 1/2 quart dish. Top with cheese and almonds.

4. Bake at 350 degrees for 35 minutes.
