Banana Cheesecake
ingredients
Crust- 2 1/2 cups graham cracker crumbs
- 1/2 cup (one stick) butter, melted
- 16 oz cream cheese
- 8 oz mascarpone cheese
- 2 LG ripe bananas, broken into chunks
- 2 tsp vanilla extract
- 1 Tbsp fresh lemon juice
- 3/4 cup sugar
- 3 eggs, lightly beaten
- 4 - 6 oz high-quality caramel sauce

1. Preheat oven to 400°.

2. Mix graham cracker crumbs and butter for crust. Press crumbs into bottom of greased 9" spring-form pan, bake for 5 minutes, then remove from oven.

3. Reduce oven temperature to exactly 300°.

4. Blend cheeses in a mixer or food processor until smooth. Add in bananas, vanilla, lemon juice and sugar, followed by eggs (a bit at a time), pulsing until smooth.

5. Pour filling into pan and bake 50 - 70 minutes, until cake begins to set but is still slightly wobbly in the center. It will continue to set as it cools. Placing a bowl of water in the oven while baking will prevent cake from splitting.

6. Cool to room temperature , then chill overnight.

7. Heat caramel sauce to a pourable (but not runny) consistency by microwaving for 5 - 10 seconds, as needed. Drizzle sauce decoratively over top of cake.
