Mini Meatloaves in Tri-color Bell Peppers
Meatloaf, but stuffed in rings of bell pepper rather than the whole bell pepper. Easy serving & good!
ingredients
- 1 green bell pepper, seeded & sliced in 1" rings
- 1 red bell pepper, seeded & sliced in 1" rings
- 1 yellow bell pepper, seeded & sliced in 1" rings
- 1/2 # ground beef
- 1/2# ground turkey
- 1/2C panko crumbs
- 1 (28oz) can crushed tomatoes
- 2 cloves garlic, minced
- 1 egg
- 1 small onion, chopped
- 1T sage leaves, chopped
- few dashes of worcestershire sauce
- few dashes hot sauce
- salt/pepper
- 1T oil + oil for frying

1 Preheat oven to 400 degrees. Place bell pepper rings on a baking sheet. You should get about three rings per pepper.

2 In a large bowl, mix beef, turkey, crumbs, 1/2C tomatoes, garlic, egg, onion, sage, hot sauce, Worcestershire, and salt/pepper. Mix well and press mixture evenly into the pepper rings.

3 In a skillet over medium high heat, add oil and saute meatloaf rings on both sides until golden brown (about 5 minutes per side).

4 Add remaining tomatoes to the skillet and bake until cooked through, about 20 minutes.
