Chunky Chicken Salad
I love chicken salad but the added mayo can be a little fattening. So here is a healthier version
ingredients
- 2/3 cup of light ranch dressing
- 2 tablespoons lemon juice
- 1/2 teaspoon salt or to taste
- 1/2 teaspoon pepper
- 2 cups cooked diced chicken
- 2 apples cored and chopped
- 1 stalk of celery sliced
- 1/2 cup of walnuts

Combine mayo, lemon juice, salt and pepper in a bowl

Add the rest of the ingredients

Toss to coat
- 4
Cover and refrigerate for at least 2hrs.
