ingredients

  • 1 14 oz can cannellini beans
  • 1/3 lb pancetta, chopped
  • 1/3 cup olive oil
  • 2 sweet onions, chopped
  • 2 lg carrots, cut into 1/2 in dice
  • 2 rib celery, cut into 1/2 in dice
  • 6 garlic cloves, chopped fine
  • 2 zucchini, cut into 1/2 in dice
  • 1/4 lb green beans, cut into 1/2 in pcs
  • 1/2 lb yukon gold potatoes, 1/2 in dice
  • 1 head napa cabbage, shredded
  • sprig fresh thyme
  • 1 28 oz can whole tomatoes, crushed
  • 6 cups chicken stock
  • fresh grated parmesan

    In a heavy stock pot cook the pancetta in the oil over moderate heat, stirring, until it is crisp and pale golden. Add the onion, and cook the mixture, stirring, until the onion is softened. Add the carrots, celery and garlic and cook the mixture, stirring. Add the cabbage and cook the mixture, stirring, until the cabbage is wilted. Add the tomatoes, the broth and thyme and simmer the soup, covered, for one hour.

    Add the drained and rinsed cannellini beans.

    Season aggressively with salt and pepper.

    The soup may be made three days in advance and kept covered and chilled.

    Sprinkle with parmesan before serving.
