Sirloin Citrus Salad
ingredients
- 1 lb boneless top sirloin, 1" thick
- Citrus Vinaigrette
- 1 Tbls olive oil
- 4 c torn romaine lettuce
- 2 oranges, peeled into segments
- 1/4 c walnuts
- 1 c strawberries, sliced
- Vinegarette:
- 1 Tbls olive oil
- 2 Tbls orange juice
- 2 Tbls red wine vinegar
- 2 tsp honey
- 1 1/4 Dijon mustard
directions
Prepare vinaigrette, reserve. Cut beef steak in 1/8’ thick slices;then cut in half. heat oil in lg non stick skillet over medium high heat, Stir fry beef 1-2 minutes. Remove with slotted spoon and season with salt & pepper. Toss lettuce with beef and oranges in a large bowl. Top with walnuts and drizzle with citrus vinaigrette. garnish with strawberries.
