Zucchini Nut Bread

ingredients

  • 1 1/2 cup all-purpose flour
  • 1 t. cinnamon
  • 1/2 t. baking soda
  • 1/4 t. baking powder
  • 1/4 t. salt
  • 1/4 t. nutmeg
  • 1 cup sugar
  • 1 cup finely shredded zucchini
  • 1/4 cup cooking oil
  • 1 egg
  • 1/4 t. finely shredded lemon peel
  • 1/2 cup chopped walnuts or pecans

    Preheat oven to 350.

    Grease bottom & sides of a 8x4x2 bread pan. Mix flour, cinnamon, baking soda, baking powder, salt, and nutmeg and set aside.

    In another bowl combine sugar, zucchini, oil, egg, & lemon peel and mix well.

    Add dry mixture into zucchini mixture just until moist. It will be lumpy. Fold in nuts.

    Spoon into pan and bake for 55 to 60 minutes or until wooden toothpick inserted NEAR the middle comes out clean. Cool in pan 10 minutes then remove. Cool completely then wrap in foil and store overnight before cutting.
