HKP's Potato Salad
ingredients
- 1 bag red potatoes, or 8-10 medium red potatoes
- 3 celery stalks, finely diced
- 4 eggs, boiled and finely diced
- 6-8 sweet pickles, finely diced
- 1/2 cup chopped flat leaf parsley
- 1 cup Hellman’s mayonnaise
- 1 heaping tbs yellow mustard
- salt and pepper to taste
- paprika for dusting

Boil potatoes until tender. Let cool and cut into 1/2 inch cubes.

In a large mixing bowl, mix potatoes, celery, sweet pickles, eggs, parsley, mayonnaise, yellow mustard and salt and pepper to taste. Add more mayonnaise if salad is too dry.

Sprinkle top with paprika.

Chill for at least 1 hour before serving.
