RABBIT SAUCE PIQUANT
This is for a party and will serve 10 20 people. You can freeze what you don’t eat for your favorite relations or friends or to eat all by yourself. You can use Rabbit or Chicken
ingredients
- 1/2 cup bacon drippings or oil
- 2 cups all-purpose flour
- 3 cups chopped onion
- 1/2 cup chopped bell pepper
- 1 cup chopped green onions
- 1/4 cup chopped celery
- 1 cup chopped fresh parsley
- 2 tablespoons chopped garlic
- 2 cups stock or water
- 6 pounds rabbit or chicken cut up.
- 1 pound mushrooms, sliced
- 8 cups tomato sauce
- 2 cups dry white wine (optional)
- 1 cup olives, stuffed with pimentos
- 3 Tablespoon Worcestershire sauce
- Louisiana hot sauce or ground cayenne pepper to taste
- 1/4 teaspoon crushed dried mint
- 3 tablespoons salt.

With the bacon drippings and flour, in a large pot over medium heat make a dark roux. Add the onions, bell pepper, green onions, and celery, and cook until the onions are clear. Add the parsley and garlic and cook another 10 minutes. Add the stock slowly, stirring all the while to create a smooth, thick gravy. Add the remaining ingredients and enough water or stock to cover. Bring to a boil, then turn the heat to low, cover and simmer 4 to 6 hours. Serve over cooked spaghetti or rice.
