New York Cheesecake
A Schrauger/Cosselman family favorite. Good with berry topping, strawberry jam swirled in, or plain.
ingredients
- CRUST:
- 2 T. butter
- 2 T. sugar
- 1 sleeve graham crackers
- FILLING:
- 4-8 oz cream cheese
- 1 t. vanilla
- 2/3 c. sugar
- 2 eggs
- 1 c. sour cream
- 2 T cornstarch

Either use graham cracker crumbs from store or make own: Put graham crackers in ziplock and use rolling pin to crush crackers.

Add butter and sugar. Press in bottom and up sides of large spring form pan.

Mix cream cheese, vanilla, sugar.

Add 2 eggs, sour cream and cornstarch. Mix lightly.

Pour into crust.

Bake 425 for 15 minutes

Bake 200 for 45 minutes

Turn off oven. Prop oven door open couple inches with wood spoon and leave in oven for several hours. Crack in top shows cheesecake is done.
