Not your average cheesecake recipe.

ingredients

Crust:
  • 1 1/2 cups crushed graham crackers
  • 1/2 teaspoon cinnamon
  • 1/2 cup sugar
  • 1/2 cup ground pecans
  • 1/4 cup soft butter
Filling
  • 4 (8oz.) packages cream cheese
  • 1/2 pint heavy cream
  • 1 tsp. vanilla
  • 2 tbsp. lemon juice
  • 6 eggs
  • 1/3 cup sour cream
  • 2 cups confectioners’ sugar
  • 2 tbsp. flour
Topping variations:
  • 1 box frozen strawberries, defrosted
  • 1 cup fresh strawberries.
  • Pour frozen strawberries over chilled cheesecake and arrange fresh strawberries on top.
  • OR
  • Glaze top of cheesecake with melted white or semi sweet chocolate, or a chocolate ganache.
  • OR
  • Use a jar of blueberry or your favorite preserves, put the jar in the microwave for 5 seconds at a time until softened enough to spread on cheesecake.

    Ingredients for filling should be at room temperature.

    Cream the cheese. Add eggs, one at a time beating thoroughly after each. Add all the other ingredients and beat until smooth. Pour into crust and bake for 50 minutes in a 325 degree oven. DO NOT OVERBAKE! Turn oven off and leave cake in oven for another hour with door closed. Remove cake to cool. Chill overnight before serving.
