Elsie's Zuchini Bread

Makes 2 loaves of bread

ingredients

  • 3 eggs
  • 1 c. vegetable oil
  • 2 c. sugar
  • 2 c. grated zucchini
  • 2 tsp. vanilla
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 1/2 c. chopped nuts
  • 1/4 tsp. baking powder

directions

Beat the eggs until light and foamy. Add the sugar, zucchini and vanilla. In a separate bowl, mix together the flour, baking soda, salt, cinnamon, and baking powder. Add the flour mixture to the zucchini mixture. Add the nuts. mix well. Pour the batter into 2 greased loaf pans. Bake 1 hour at 325°. Test with a toothpick to see if it is done.
