Mediterranean Summer Salad

ingredients

  • 8oz. orzo pasta
  • 2c. halved cherry tomatoes
  • 1c. fresh basil leaves, chopped
  • 1tsp. minced garlic
  • 1/4c. toasted pine nuts
  • 1/2c. kalamata olives, pitted and halved
  • 4oz. feta cheese, broken into chunks
  • 2c. baby spinach leaves
  • 1T. extra-virgin olive oil
  • 2T. balsamic vinegar
  • Salt and freshly ground blacl pepper

    Cook orzo according to the package directions.

    Meanwhile, in a large bowl, combine tomatoes, basil, garlic, pine nuts, olives, feta, and spinach. Add cooked orzo.

    In a small bowl, whisk together oil, vinegar, and salt and pepper to taste; toss with salad.
