Cinnamon-y Banana Bread
ingredients
- 1 1/2 Cups Flour
- 1 1/2 Tsp. Baking Powder
- 1/4 Tsp. Baking Soda
- 1/4 Tsp. Ground Cinnamon
- 1/4 Tsp. Pumpkin Pie Spice
- 1/2 Tsp. Pampered Chef Cinnamon Spice Blend
- 1 Egg
- 1 Cup Mashed Bananas (3 Medium)
- 3/4 Cup Sugar
- 1/4 Cup Vegetable Oil
- 1 Tsp. Finely Shredded Lemon Peel
- 1/2 Cup Chopped Pecans

1. Grease bottom and half way up sides of an 8x4x2 inch loaf pan; set aside. In medium mixing bowl, combine flour, baking powder and soda, spices and 1/8 tsp. salt. Make a well in the center of the dry mixture; set aside.

2. In another bowl, combine egg, bananas, sugar, oil and lemon peel. Add egg mixture all at once to dry mixture. Stir until just moistened. Batter will be lumpy. Fold in nuts.

3. Spoon batter in prepared pan. Bake at 350° degrees for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool on rack. Wrap and store overnight before slicing.

4. Serve heated in microwave for a few seconds or until warm, and spread with butter.
