Honey Poppy Seed Salad
ingredients
- SALAD:
- 2-3 heads romaine lettuce
- 2 lg Granny Smith apples, diced
- 1/2 lb red seedless grapes,
- 3/4 c. cheddar cheese, shredded
- 1/2 c. walnuts, coarsely chopped
- 1/2 c. banana chips, coarsely chopped
- 1/4 c. dried cranberries
- 1/2 c. sunflower seeds,
- 1/4 c. red onion slices
- HONEY POPPY SEED DRESSING:
- 1 t. dry mustard
- 2 t. poppy seeds
- 1 t. paprika
- 1/2 t. garlic powder
- 1 t. onion, minced
- 3 T sugar
- 2 T honey
- 1/4 c. vinegar (red wine, cider, or white)
- 1 1/4 c. olive or canola oil

Rip romaine into bite-size pieces. Add onion and toss.

In separate bowl, combine walnuts, banana chips, cranberries, and sunflower seeds. Serve individual salads or make 1 large bowl. Just before serving sprinkle walnut mixture on top of greens. Add diced apples, grapes, and cheese. Serve with dressing.

To prepare dressing, mix together the 6 dry ingredients. Add vinegar and honey. Beat with electric mixer on low.

Add oil slowly in small amounts. Continue mixing on medium, then increase to high speed as mixture thickens. Refrigerate until serving.
