Shrimp and Peppers
ingredients
- 2 T olive oil
- 1/2 Yellow or red pepper cut into strips
- 1 T fresh basil, chopped
- 1/2 C yellow onion, chopped
- 2 t Bick’s red pepper relish
- 1/2 stalk celery, chopped fine
- 2 cloves garlic
- 1/4 C vermouth
- salt & pepper to taste

Saute onions for 2 minutes, then add celery and cook until soft. Add peppers and cook for 2-3 minutes. Add red pepper relish and garlic and cook for another minute. Add vermouth, mix well and cook some of the vermouth off for about one minute. Add prawns and cook for 3-5 minutes. Add fresh basil, turn heat off and let sit for 5 minutes.

Serve on top of hot cooked pasta with plenty of grated Parmesan cheese.
