Broccoli, Ham, and Cheese Soup
ingredients
- 1-16 oz pkg frozen broccoli (or 2 bunches fresh)
- 1/2 c. onion, chopped
- 1/2 c. celery chopped
- 3 potatoes, cubed
- 2 c. chicken broth
- 2 T. butter
- 2 t. salt
- 1 T. flour
- 2 c. half and half (or 1% milk)
- 1/3 box Velveeta cheese, cut in small cubes
- 1 c. ham, chopped

Place broccoli*, onion, celery, potatoes, in chicken broth. Boil for 10 minutes.

In saucepan melt butter over low heat, add flour. Slowly add half and half/milk until mixture thickens. Add to cooked broccoli mixture (do not drain).

Add cheese. Stir over medium heat until cheese melts.

Note: To keep broccoli bright green, leave cover slightly ajar while cooking
