Broccoli, Ham, and Cheese Soup

ingredients

  • 1-16 oz pkg frozen broccoli (or 2 bunches fresh)
  • 1/2 c. onion, chopped
  • 1/2 c. celery chopped
  • 3 potatoes, cubed
  • 2 c. chicken broth
  • 2 T. butter
  • 2 t. salt
  • 1 T. flour
  • 2 c. half and half (or 1% milk)
  • 1/3 box Velveeta cheese, cut in small cubes
  • 1 c. ham, chopped

directions

    Place broccoli*, onion, celery, potatoes, in chicken broth. Boil for 10 minutes.

  • 2

    In saucepan melt butter over low heat, add flour. Slowly add half and half/milk until mixture thickens. Add to cooked broccoli mixture (do not drain).

  • 3

    Add cheese. Stir over medium heat until cheese melts.

  • 4

    Note: To keep broccoli bright green, leave cover slightly ajar while cooking
