Mommy's Sour Cream Enchiladas
This is probably my favorite comfort food ever. I’ve been asking my mom to make it for birthday dinners, Christmas, etc. for years. Now, it’s a favorite one for me to take to potlucks or to drop off when some one’s had surgery, a new baby or a loss. It tastes like love.
ingredients
- filling:
- 1 c. grated cheese
- 1 c. cooked chicken, diced (torn up rotisserie works great)
- 1/2 c. chopped green onions
- 1 dozen corn tortillas (give or take a few)
- sauce:
- 2 cans cream of chicken soup
- 1 c. sour cream
- 1 small can diced green chilies
- 1/2 tsp. salt
- 1 c. milk or chicken broth

Combine ingredients for sauce and heat until mixture is smooth. Mix cheese, chicken and onions together. dip tortillas in hot oil to soften (microwaving works well in a pinch though). Place a portion of filling across the center of the tortilla, add a TBL of sauce. Roll tortilla.

Place rolled sides down in baking dish. Pour remaining sauce over enchiladas. Bake at 350 for 30 min.
