Kibbe
ingredients
- 1 lb lamb ground very fine
- 1/2 cup bulgur use #1 fine
- 1 grated onion
- salt and pepper
- 1 tsp Allspice
- a pinch of cinnamon

Soak bulgur in water. Drain before using.

Mix all ingredients together by hand. Put hands into ice water and add water to meat. This keeps meat mixture cold which is very important.

Knead until meat mixture is light.
notes
Kibbe can be eaten raw, fried like a burger, baked, stuffed, etc.
