Usually one of Tim’s favorites...except after he won the ANNUAL pie eating contest at Hafey Day. Granny had a fresh one waiting for him when he came home!

ingredients

  • 1 c. fine graham crackers (14-16 crackers)
  • 2 T. butter
  • 1/2 c. Real Lemon, reconstituted lemon juice
  • 1 1/3 c. (15 oz. can) eagle brand sweetened condensed milk
  • 2 eggs, separated
  • 1/4 tsp. cream of tartar
  • 4 T. sugar

directions

Crust

Blend crumbs and softened butter. Press firmly and evenly onto bottom and side of 8 inch pie plate

Filling

Blend Borden’s sweetened condensed milk, egg yokes. Gradually add Real Lemon, stirring until blended. Pour into crust.

Meringue

Beat egg whites (at room temp.) and cream of tartar until foamy. Gradually add sugar while beating until stiff (not dry). Carefully spread part of meringue over filling, sealing to crust. Add remaining meringue , swirl as desired. Bake at 400 until brown, about 6 minutes.
