Baked Flounder filets
ingredients
- 4 Flounder fillets
- 3 tbsp olive oil
- Fresh ground pepper
- 1 tbsp onion chopped
- 1/2 LB mushrooms finely sliced
- 3 tbsp dry white wine
- 1 tbsp lemon juice
- 1 tbsp parsley chopped fine

Preheat oven to 400 degrees. Sauté onions in oil until soft. Add mushrooms and cook for 5 minutes or until mushrooms release their liquid.

Stir in wine, lemon juice, parsley, and cook until most of the liquid has evaporated.

Lightly grease 4 pieces of aluminum foil with oil. Place a fillet on each piece and season with pepper. Spoon some mushroom mixture sauce over each fillet. Draw edges of foil together and seal.

Bake for 20 minutes. Garnish with lemon slices
