Roasted Garlic Mashed Potatoes
ingredients
- 1 small head garlic
- 1 tsp olive oil
- 2 punds baking potatoes
- Salt
- 1/2 cup milk
- 2 Tbsp unsalted butter
- Fresh Ground Pepper

Preheat Over to 400 Degrees

Peel and quarter potatoes
- 3
Cut 1/4 inch off top of garlic head

Place bulb on piece of aluminum foil and drizzle with olive oil.

Tightly enclose the foil around bulb and roast 45 minutes. Set aside

Place potatoes in large pot of salted water

Cook until tender; 20 to 25 minutes

Drain potatoes in colander

Add milk and butter to the pot and bring to boil over medium high heat.

Remove from heat.

Squeeze the roasted garlic from skin into hot milk and add drained potatoes. Whip potatoes until smooth.

Season with salt and pepper.
