Aloo Gobi
Aloo Gobi ...a simple indian subzi
ingredients
- 1. 1 potato
- 2. 1/2 a bunch of cauliflower
- 3. 1 cup frozen peas
- 4. 1 tbsp cumin powder
- 5. 1 tbsp coriander powder
- 6. 1 tsp cumin seeds
- 7. 1 tbsp badshaad curry powder (garam masala)
- 8. cilantro finely cut
- 9. 2 tbsp oil
- 10. salt to taste
- 11. 1/2 inch ginger grated finely
- 12. pinch of aseofotida (hing)
- 13. 1/2 tsp turmeric
- 14. juice of 1/2 lemon

1. wash and cut the cauliflower florets into bite size pieces

2. peel the skin of the potato and cut it into bite size squares

3. heat the oil in a pan
- 4
4. add cumin seeds when the oil is warm
- 5
5. make a paste of turmeric, hing, cumin powder , corainder powder in very little water and add to the oil (this prevents the spices from burning in hot oil) and retain their flavor

6. Add grated ginger

7. sautee for 1 min and add cut potatoes and add a pinch of salt. flavor the vegetables as u go so that the salt is absorbed in the food.

8. sautee it for 5 min and then add the cauliflower and add another dash of salt.

9. stir well add some water if it is too dry and cover it for 5 min.

10. Add in frozen peas and salt if needed to taste

11. Add the garam masala powder and mix well.

12. turn the flame off, and then add lemon juice and mix and top it with finely cut cilantro
