Skillet Tetrazzini
Serve up Turkey or Chicken leftovers in a skillet ready in minutes
ingredients
- 2 tablespoons butter
- 1 package (8 ounces) sliced cremini mushrooms
- 2 cloves garlic
- 1 can (14 ounce) chicken broth
- 1 cup water
- 1 tablespoon dry sherry
- 8 ounces spaghetti broken in half
- 2 cups half and half at room temperature
- 1 cup frozen peas
- 1/2 cup grated parmesan cheese (divided)
- 1 tablespoon minced fresh parsley
- freshly ground black pepper to taste

In large skillet, melt butter over medium-high heat.

add mushrooms and garlic; cook stirring occasionally until mushrooms are lightly browned, about 4 minutes

add broth, water, and sherry; bring to a boil.

Stir in spaghetti, reduce heat, cover and simmer until most of the liquid is absorbed about 10 minutes.

stir in turkey, half and half, and peas. Cook stirring occasionally until pasta is tender and sauce is slightly thickened, about 5 minutes.

Remove frome heat; stir in half of the parmesan, parsley, and pepper.

Serve with remaing parmesan.

Dry Sherry has a mild nutty flavor and is ideal for meat and poultry recipes, as well as asian dishes. Cream sherry is much sweeter and fuller in flavor, which is best used for desserts.
