Navy Bean Soup / Split Pea soup

After you have eaten the meat from a bone-in ham, what do you do with the bone? Make a delicious soup!! That’s what. It tastes better the next day.

  • One ham bone with bits of ham on it. The more ham the better

  • 1 lb dried Navy Beans

  • 1 onion chopped

  • ½ lb carrots chopped

  • 3 ribs celery chopped

  • salt and pepper to taste

  • hot sauce (optional)

  • Cover the beans with cold water, cover the pot and bring to a boil. Let boil for 5 min. Let stand for 1 hour.

  • Drain and add water enough to cover the beans, the ham bone, onions,celery, carrots, salt and pepper.

  • Cover bring to a boil. Reduce the heat and simmer for about 4 hours. The beans should be very soft and mushy. Remove the ham bone let cool and remove all of the remaining meat. If there are big pieces cut the in bite sized chunks. Add the cut ham meat back to the pot.

  • This soup will thicken as it cools and will taste better the next day.

  • Adjust the seasonings and add hot sauce if you want a little kick.

  • Must be served with corn bread

For Pea Soup do the same except: Reduce the cooking time by half, using peas instead of beans of course :)
