Ratatouille
ingredients
- 3 or 4 medium zucchini, diced small
- 1 eggplant, unpeeled, diced small
- 1 tomato, diced small
- olive oil
- 1/2 medium onion, sliced
- 1 clove garlic, chopped
- 1 teaspoon oregano
- 1 teaspoon parsley flakes
- 1 teaspoon dried basil
- pinch of marjoram
- pinch of rosemary
- salt
- pepper
directions
Cover bottom of large skillet with olive oil. Sauté onion for a few min., then add garlic. Slightly brown.Add all vegetables, then seasonings. Cook about 15 min., uncovered, stirring occasionally. Cover and cook 30 min. or so, stirring frequently until vegetables are tender and juice has cooked down some-what.
