Mandarin Salad
This salad is always a hit with guests! I usually make this during the summer and pair it with a yummy fish recipe.
ingredients
- 1/2 cup sliced almonds
- 3 tablespoons sugar
- Dressing:
- 1/2 teaspoon salt
- dash of pepper
- 1/4 cup vegetable oil
- 1 tablespoon chopped parsley
- 2 tablespoons sugar
- 2 tablespoons white wine vinegar
- dash of Tabasco
- Salad:
- 1/2 head Iceberg lettuce
- 1/2 head romaine lettuce
- 1 cup chopped celery
- 2 whole green onions, chopped
- 1 11oz can mandarin oranges, drained

In small pan over medium heat, cook almonds and sugar, stirring constantly until sugar melts.

Store almonds in airtight container, and set aside to cool.

Mix all dressing ingredients and chill.

Mix lettuce, celery, and onions in a bowl.

Add mandarin oranges, almonds, and dressing.

Allow flavors to meld together 5 minutes before serving.
