Harvest Cookies
ingredients
- 3/4 cup canned plain pumpkin puree
- 1 cup packed dark brown sugar
- 2 large eggs
- 1/4 cup light olive oil
- 2/3 cup whole wheat pastry flour
- 2/3 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 1/2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1/2 cup shopped walnuts
- 1/2 cup dried cranberries

Preheat oven to 350°F.

Line baking sheet with parchment.

In bowl, whisk pumpkin, brown sugar, eggs, and oil. In large bowl, whisk together pastry flour, all-purpose flour, baking powder, baking soda, and spices. Make a well in center and stir in pumpkin mixture. Add walnuts and cranberries, stir well. Drop dough by tablespoonfuls about 1 1/2" apart. Bake 10 min. or until lightly browned and firm to the tough. Remove to rack to cool.
