Fennel Olive Salad

Cold, refreshing salad - full of flavors: garlic, fennel, and green olives! I first had this dish at my Aunt Margie’s house. Yum.

ingredients

  • 2 fennel bulbs
  • 3 cloves garlic, crushed
  • salt
  • 1C green olives, sliced crosswise
  • 1/4C walnuts or almonds, chopped
  • 3T olive oil
  • 1T lemon juice
  • 1/4t dried oregano

directions

    1 Clean and cut off fronds and stalks from the fennel. Quarter the bulbs lengthwise. Cut out the solid core and slice crosswise very thinly. It’s best to do it by hand, since a mandoline will make it too thin.

    2 Combine the fennel, olives, nuts, and garlic in a bowl. Add the oil, lemon juice, salt, and oregano. Toss well and adjust seasonings. You may need to add a little more lemon juice or salt.
