Cold Chinese Noodles
ingredients
- 1 whole boneless chicken breast,
- poach and cut into strips.
- 1 bunch of scallions,
- cut into 2 inch strps and julienne.
- 1/2 cup coarsely chopped walnuts
- 1 lb angel hair/thin vermicilli,
- cook al dente and drain.
- 1/2 cup (or less) vegetable oil
- 2 1/2 Tbsp Oriental Sesame Oil
- 2 Tbsp sesame Seeds
- 1/4 cup soy sauce
- 1 scant hot chili oil.

In a small saucepan over medium heat until seeds are lightly brown:

Combine vegetable, sesame oil and seeds. Remove from heat.

Stir in 3/4 cup soy sauce. 1 scant hot chili oil.

Stand back. . .Mixture will crackle.

Combine chicken, scallions, walnuts in a large mixing bowl.

Add pasta.

Add hot dressing and toss to coat evenly.

Transfer noodles to serving bowl. Refrigerate until cold.
