Cold Chinese Noodles

ingredients

  • 1 whole boneless chicken breast,
  • poach and cut into strips.
  • 1 bunch of scallions,
  • cut into 2 inch strps and julienne.
  • 1/2 cup coarsely chopped walnuts
  • 1 lb angel hair/thin vermicilli,
  • cook al dente and drain.
  • 1/2 cup (or less) vegetable oil
  • 2 1/2 Tbsp Oriental Sesame Oil
  • 2 Tbsp sesame Seeds
  • 1/4 cup soy sauce
  • 1 scant hot chili oil.

    In a small saucepan over medium heat until seeds are lightly brown:

    Combine vegetable, sesame oil and seeds. Remove from heat.

    Stir in 3/4 cup soy sauce. 1 scant hot chili oil.

    Stand back. . .Mixture will crackle.

    Combine chicken, scallions, walnuts in a large mixing bowl.

    Add pasta.

  • 7

    Add hot dressing and toss to coat evenly.

  • 8

    Transfer noodles to serving bowl. Refrigerate until cold.
