HKP's Mediterranean Baked Fish
ingredients
- 4-6 fillets of fresh fish
- 1 clove garlic, chopped
- 1 sweet onion, sliced
- 1 lemon, sliced into thin rounds
- 1 large can diced tomatoes, drained
- 1 cup whole, pitted Kalamata olives
- 1/2 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- salt and pepper to taste

Preheat oven to 375°.

In a bowl, mix tomatoes, garlic, olives, oregano, basil, thyme, salt and pepper to taste.

In a glass baking dish, place sliced onions in one layer.

Layer onions with sliced lemons.

Place fish fillets on top of lemons in one layer.

Season fish with salt and pepper.

Cover fish with tomato mixture.

Drizzle with olive oil.

Bake for 20-30 minutes, depending on how thick the fillets are.

Serve alone or over rice.
notes
This dish is best with speckled trout or redfish, but for all you Yankees, you could substitute talapia.
