Nana made these every lent for us. With all their Cheesy goodness they are a perfect Lent Friday dinner. Or if you have stale Tortilla Chips.

ingredients

  • 7 Corn Tortillas, torn up or 2 handfuls of stale chips
  • 10oz. can Enchilada Sauce
  • 1 cup Shredded Cheese (Cheddar or Mexican) plus some for topping
  • 1/2 cup sliced green onion
  • 1/2 cup sliced black olives
  • 1/2 cup sour cream

directions

Put about a tbs of oil into a pan on medium heat. Add Tortilla pieces till browned. Add Enchilada Sauce an stir up well. Mix in Cheese and cook over low heat for 10 to 15 minutes or till hot. Serve and sprinkle Green Onion and Olives over top. Add Sour Cream and more Cheese if desired.

notes

They are so good. If you want to mix in cooked Ground Beef or Chicken you can.
