PISTACHIO - CRUSTED ROASTED SALMON

ingredients

  • 4 salmon fillets, each about 8 oz, preferably 1 inch thick
  • 3 tbsp each grainy Dijon mustard and pure maple syrup
  • Generous pinches of salt and freshly ground black pepper
  • 1/4 cup finely chopped pistachios

    Preheat oven to 475*

    Line rimmed baking sheet with foil lightly spray with vegetable oil (Pam)

    Place salmon skin side down

  • 4

    In bowl combine mustard, maple syrup, salt, pepper, and nuts. Spread evenly over salmon.

    Roast in preheated over 10-12 minutes or until done.
