PISTACHIO - CRUSTED ROASTED SALMON

- 4 salmon fillets, each about 8 oz, preferably 1 inch thick
- 3 tbsp each grainy Dijon mustard and pure maple syrup
- Generous pinches of salt and freshly ground black pepper
- 1/4 cup finely chopped pistachios

Preheat oven to 475*

Line rimmed baking sheet with foil lightly spray with vegetable oil (Pam)

Place salmon skin side down

In bowl combine mustard, maple syrup, salt, pepper, and nuts. Spread evenly over salmon.

Roast in preheated over 10-12 minutes or until done.
