Easy Cheesy Brunch Bake
A low carb egg bake with no crust.
ingredients
- 1 lb pork sausage
- 1 medium onion chopped
- 1 4oz can or 1/4 lb sliced fresh mushrooms
- 12 large eggs
- 1/3 cup sour cream
- 1 cup chopped tomatoes
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterrey jack cheese
- salt and pepper to taste
directions
Cook sausage, mushrooms and onion in large skillet until sausage is cooked through, stirring occasionally. Drain, set aside. Beat eggs and sour cream in medium bowl with wire whisk until well blended. Salt and pepper to taste. Pour into greased 9 x 13 inch baking dish. Bake at 400 degrees for 10 minutes until mixture is softly set. Reduce oven temp to 325 degrees. Spoon tomatoes over egg mixture. Top with sausage mixture. Sprinkle with cheeses. Bake an additional 30 minutes or until egg mixture is set in center.
notes
This is a great dish for company for breakfast. I serve toast and fresh fruit with it. It has no crust so it is a good low carb dish.
