Roast beef in red wine
The Roast is very tender and juicy.
ingredients

- 1 Chuck Roast
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 Onion
- 1 or 2 Carrots
- 1 to 3 tablespoon Minces Garlic
- Thyme
- Bay leave
- Rosemary
- Black Peppercorn
- 2/3 cup water
- 1 cup red wine

1. Preheat oven to 350F.

2. Rinse beef round roast with water then pat with paper towel to dry.

3. Cut onions and carrots.

4. Place 1/2 the onion and carrots slices on the bottom of the dry roaster pan. Season roast on all sides with 1 tsp salt, 1 tsp pepper, Thyme, Bay leave, Rosemary, Black Peppercorn and minces garlic and lay on top of the bed of onions. Lay remaining onions and sliced carrots on top of the roast.

5. In a large bowl, combine 1 cup of wine and 2/3 cup of water. Pour over the roast.

6. Cover the roaster pan with aluminum foil and place in oven and bake for 45 minutes.

7. Then uncover the roaster pan and bake for 30 to 45 minutes.
