APPLE CRUMB PIE
ingredients
- Crumb Topping
- Pastry for 1-crust 9 inch pie, unbaked
- 6 cups sliced peeled tart cooking apples
- 1/2 cup sugar
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon graded lemon rind
- 2 teaspoons lemon juice

Prepare Crumb Topping and set aside. Line pie pan. Mix remaining ingredients and fill pie shell. Sprinkle with topping. Cover with foil, tucking under rim of pan. Bake at 425°f. for 20 minutes, then uncover and bake 20-25 minutes longer, or until fruit is tender. Serve warm.

Crumb Topping: Combine 1/2 cup firmly packed light brown sugar, 1/4 cup butter, 1/3 cup flour and 1 teaspoon cinnamon. Mix with fingertips until mixture resembles coarse crumbs.
