Donna's Chicken Piccata
ingredients
- 4 Boneless, Skinless Chicken Breast Halves
- 1/2 Cup All-Purpose Flour
- 1/4 Cup (1/2 Stick) Margarine or Butter
- 2 Cloves Garlic, Finely Chopped
- 1 Cup Dry White Wine or Chicken Broth (I prefer using wine for obvious reasons)
- 2 Tbsp Lemon Juice
- 1/4 tsp Pepper
- 1 Tbsp Capers

Flatten each chicken breast half to 1/4 inch thickness between sheets of plastic wrap or waxed paper. Coat chicken with flour. Melt butter in 12-inch skillet over medium heat. Cook chicken and garlic in butter 4-6 minutes, turning chicken once, until juice is no longer pink when centers of thickness are cut. Add wine and lemon juice. Sprinkle chicken with pepper. Heat until hot. Sprinkle with capers.
