French Toast Bites with Fruit Compote
ingredients
- 6 tbsp unsalted butter, divided
- 2 medium bananas, peeled and diced
- 2 Fuji apples, peeled, cored and diced
- 2 tbsp brown sugar
- 2 tbsp orange juice
- 4 eggs
- 2/3 cup milk
- 2 tbsp sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 baguette (about 8 oz), trimmed and slices cut in half

Fruit Compote:

In a large skillet, melt 2 tbsp butter over medium-high heat. Add bananas, apples, brown sugar and juice. Cover and reduce heat to low; simmer 7-8 min, or until liquid is absorbed and fruit is tender.

French Toast:

In medium bowl, whisk together eggs, milk, sugar, cinnamon and nutmeg. Working in batches, soak the bread slices in milk mixture 3-4 min.

In large skillet, melt 2 tbsp butter over medium heat. Add half of soaked pieces in a single layer and fry until golden, turning once, 2-4min total. Repeat with remaining butter and soaked bread. Serve with fruit compote.
