Thai Shrimp and Sesame Noodles
When nothing else sounds good - this always is!
ingredients
- 1 lb medium prawns, shelled and deveined
- 1 8oz bottle Newman’s Own Italian dressing
- 2 T chunky peanut butter
- 1 T soy sauce
- 1 T honey
- 1 tsp grated ginger
- 1/8 tsp crushed red pepper
- 1 8-oz pkg angel’s hair pasta
- 2 T vegetable oil
- 1 T sesame oil
- 1 cup shredded carrots (or more!)
- 2 T chopped fresh cilantro

About 1 hour before serving: Mix shrimp with 1/3 cup salad dressing. Cover, refrigerate for 1 hour.

In small bowl whisk peanut butter, soy, honey, ginger, red pepper and remaining salad dressing. Set aside.

Prepare angel hair, drain.

Heat oils until very hot. Cook carrots for 1 minute. Drain salad dressing from shrimp, add to carrots and cook, stirring constantly, until shrimp is opaque. Add sauce to pan and warm through.

In large bowl, toss hot pasta with shrimp and sauce and chopped cilantro.
