Caramelized Onion Flat bread

Be patient and let the onions truly caramelize to a golden brown. This can also be baked with topping for a really unique pizza crust.

ingredients

  • 1 loaf (1 lb) frozen white or wheat bread, thawed to room temperature
  • 2 tablespoons extra virgin olive oil
  • 1/2 onion
  • about 1/3 cup flour
  • 3 tablespoons very good, fruity olive oil
  • 1 teaspoon fresh thyme leaves

    Heat 2 tbls extra virgin olive oil in pan. Cut the onions into thin rings. Add onions to the pan over medium heat and cook until golden brown (caramelized) about 20 minutes. take off heat and cool. Course chop.

    With your hands, flatten the bread dough on a floured board. Top with 3 tbls. olive oil, thyme leaves and cooled onions and knead into the bread until incorporated. Place the dough into a bowl and cover. let the dough rise in a warm place until doubled, 50 to 60 minutes. On a floured board, knead the dough briefly to get the air out. Divide dough into 12 equal pieces. Roll each piece into a ball and flatten in a 4-5 inch round. Place an a floured board and cover with a kitchen towel. let rise until puffy about 30 minutes. Meanwhile, prepare grill to medium heat. Brush oil on grill and on bread rounds. Lay the rounds on the grill cook turning once until it’s browned about 4 minutes on each side. Or in a 400° oven for 15-20 minutes until the edges are golden brown and it cooked through.
