Prosciutto Arugula Salad
High-class, NYC deli style.
ingredients
- 8 ounces sliced prosciutto
- baby arugula
- 2 tbsp olive oil
- 1 1/2 tsp red wine vinegar
- 4 large plum tomatoes, chopped
- salt
- pepper

Divide the prosciutto among 4 plates. Top each with an equal amount of arugula and drizzle each with 1/4 tsp of the oil.

In a small bowl, whisk together the remaining oil, vinegar, salt, and pepper to taste. Add the tomato mixture onto the center of each plate.
