Gluten-free, Wheat-free Chocolate Chip Cookies
A crispy chocolate chip cookie for the gluten-intolerant to enjoy
ingredients
- 1 cup brown sugar
- 1 tsp cinnamon
- 3 egg whites
- 1 tsp gluten-free vanilla
- 1 cup organic brown rice flour
- 1 cup chopped walnuts
- 1 cup margarine
- 1 tsp baking soda
- 1 tsp salt
- 3/4 cup rice bran
- 2 cups quick cooking oats
- 1 pkg (12 oz) Ghiradelli bittersweet chocolate chips

Preheat oven to 350 degrees. Beat margarine and sugar together until fluffy. Beat in egg whites, then vanilla.

In separate bowl, sift flour, rice bran, cinnamon, soda and salt. Add to wet mixture in 3 installments

By hand, fold in oats, nuts and chocolate chips. Drop by rounded teaspoonful (or tablespoonful for bigger cookies) onto cookie sheet lined with parchment paper.

Bake 8-10 minutes or until edges start to brown.

You can find organic brown rice flour and rice bran in the health food section of the grocery store.
