Cream Scones


Heavy cream provides both the fat and the liquid in the simplest of all scone recipes.

  • 1 3/4 Cups All-Purpose Flour
  • 2 1/4 Teaspoons Baking Powder
  • 1/4 Cup Sugar
  • 1/2 Teaspoon Salt
  • 1 1/4 Cups Heavy Cream

    Preheat the oven to 450°F.

    Sift flour, baking powder, sugar, and salt together into a large bowl. Pour in the cream and combine with a few swift strokes. Handle the dough as little as possible.

    Turn it out onto a lightly floured board. Pat to 3/4 inch thick and cut into triangles. Place triangles into scone pan and sprinkle with sugar. Bake until golden brown, about 15 minutes.
