Pico de Gallo
Fresh mild to medium hot salsa
ingredients
- 1 large garlic clove
- 6- 8 jalapeno peppers, seeds removed
- 4 tomatillos
- 6 small tomatoes, diced and excess water drained
- 1 medium sweet onion
- 1 green Italian sweet pepper, finely diced
- 2 Tab. parsley
- 2 Tab. cilantro
- 2 Tab. lime juice
- 1/2 Tab. ground cumin
- 1/2 tsp. salt, if desired
directions
In food processor, finely chop garlic & jalapeno peppers. Add parley & cilantro and process until coarsely chopped. Add tomatillos and chop again. Remove mixture and combine with remaining ingredients. Can be served immediately or chilled for several hours or overnight.
