SHAVED APPLE AND FENNEL SALADAli
- 2 baby fennel
- 2 med green apples
- 1 cup roasted cashews
- 150g brie thinly sliced
- 1 red coral lettuce chopped coarsely
- Mustard Vinaigrette
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 1 tbsp whole grain mustard
Combine ingredients form mustard vinaigrette and shake well.
Trim and half fennel, reserve some coarsely chopped frond tips.
Half and core unpeeled apples.
Slice Fennel and Apple v thinly (use grater)
Combine fennel and apple in large bowl with frond tips, cheese and nuts and dressing.
Serve on top of lettuce.
