Grilled Salmon on Fatoush
ingredients
- 6 Salmon filets
- 2 hearts Romaine or Boston lettuce
- 2 Tomatoes, diced
- 1/3 Cup Black Olives, sliced
- 1/4 Cup fresh Parsley, chopped
- 1/4 lb. Feta Cheese, crumbled
- 1 Cucumber, peeled & diced
- 2 Tbsp. fresh Lemon Juice
- 1/4 Cup Olive Oil
- 3 pieces Pita Bread

Assemble salad first. For the dressing, place the lemon juice, olive oil, salt and pepper to taste into a screw top jar; shake vigorously to mix. Pour dressing into salad bowl. Tear lettuce into bite-size pieces. Place onto dressing. Top with tomatoes, olives, parsley, and cucumber.

Toast pita bread until crisp. Top salad.

Preheat grill. Lightly spritz filets with oil. Grill filets 4-5 minutes per side until flakes. Do not overcook.

Toss salad together from the bottom, coating with dressing. Add the cheese; toss carefully.

Place salad in individual bowls or salad plates. Top each with salmon filet.
