Easy summer orzo salad from from dlynz.com.

ingredients

  • 2 garlic cloves
  • 1/3 cup white wine vinegar
  • 1/2 cup olive oil
  • 1 Tbsp of up to four fresh herbs
  • (basil, parsely, thyme, rosemary chives, etc)
  • 1/2 cup four different vegetables
  • (red peppers, cucumbers, scallions, cherry tomatoes, dried tomatoes, olives, etc)
  • 1/2 cup crumbled feta
  • 10oz orzo pasta

    1. Combine chopped garlic, chopped herbs, oil and vinegar.

    2. Add chopped vegetables.

    3. Cook orzo and cool for 5 minutes.

  • 4

    4. Add orzo and feta to vegetables and dressing. Adjust seasonings, chill, and serve (or eat).
