Mexican Wedding Cookies
Christmas Cookie
ingredients
- 1 lb butter
- 1 C powdered sugar
- 2 tbsp vanilla
- 1 tsp salt
- 2 C finely chopped pecans or walnuts
- 5 C flour
- Powdered sugar for dusting

Beat butter and powdered sugar in mixer until light and fluffy, about 10-15 minutes. Add vanilla, salt and pecans. Add flour 1 cup at a time being careful not to overmix.

Scoop with #60 scoop.

Bake @ 350° - 20 minutes

Bake until just beginning to get the slightest bit colored on the bottom.

Variation: Walnuts, pecans or almonds toasted for 10 minutes.
