Spicy Roasted Yams with Feta and Bacon

ingredients
- 1 kg yams, trimmed
- 1/4 cup olive oil
- 3 cloves of garlic, peeled
- 2 tsp sumac (optional)
- 1/2 tsp chilli powder
- 1/2 tsp black pepper
- 4 slices of rindless bacon, diced
- 100 g feta, crumbled
- 2 Tbs chopped fresh parsley
- finely grated zest of one lemon

1. Preheat oven to 180 C. Slice yams into even-sized pieces, or leave whole if small. Place into a roasting pan. Rub well with oil, crushed garlic and spices. Roast for 20-30 minutes until tender and sligthly caramelised. Allow to cool.

2. Cook diced bacon in a frying pan until crisp. Drian well on paper towell.

3. Arrange yams on severing platter and sprinkle with bacon, feta, parsley and lemon zest.
