Potato Pancakes (Latkes)

ingredients

  • 2 pounds potatoes
  • 1 onion
  • 1 cup boiling water
  • 2 eggs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup matzo meal or cracker crumbs
  • 1/2 cup oil

    Peel and grate potatoes. Grate onion. Place in strainer over a bowl. Pour boiling water over potatoes and onion. Mix briefly to press out some moisture. The boiling water will keep potatoes from discoloring. Pour off water in bowl. Leave starch in bottom of bowl. Beat eggs in bowl. Add potatoes, salt, pepper and flour. Heat oil in skillet. Drop potato mixture into hot oil by heaping tablespoons. Brown on both sides.
